Daydreaming of guacamole

Some people love it, some people are not a fan, but in my house we love guacamole. My girls gobble it up and I day-dream of lounging on the beach sipping a frozen margarita and plowing through an endless bowl of chips and fresh guacamole. It’s so simple to make and most of those store-bought ones have a funny taste so just make it yourself. You won’t be sorry.

Guacamole

Serves 4-6

Ingredients:

2 large or 4 small ripe avocados

1-2 tomatoes diced

1/4 C finely diced onion

1 TBS minced jalapeño. I used jalapeño that I had minced and frozen.

2 TBS cilantro fresh chopped or Gourmet Gardens. I prefer fresh, but I didn’t have any so I used Gourmet Gardens.

2 TBS lime juice. Fresh juiced or from the bottle.

Kosher or sea salt

Pepper

Mash up avocado with fork, add in onion, jalapeño, tomatoes, lime juice, cilantro and salt and pepper to taste.

Serve with tortilla chips
