Pesto Chicken – a quick and easy summer meal

Sooooo, hello there stranger! It’s me, Christy. I know I’ve been missing in action for the past few weeks. I was victim to the end of the school year crazies. It’s on Web MD under illnesses. I swear there was a different field trip every day of the week for each kid, programs, field day, awards, breakfasts. You name it, it was crammed in to the end of the year. I’m not sure who was more relieved for the school year to roll to an end, the kids or this frazzled taxi cab. So I took a little time off to regroup and catch my breath. Deep breath in, and deep breath out. Ahhhh, now if I could just magically land on a remote beach somewhere with a fruity drink in one hand, we’d be in business! Speaking of beaches, we haven’t made it to our nearby beaches of Lake Michigan yet since the weather hasn’t really cooperated and when it was warm enough, we were out of town. Hopefully we will make it there within the next week. The girls are biting at the bit! We have had a little splash park fun, played in the sprinklers at home, and stopped for ice cream and milk shakes a few times already so I’d say thier summer is off to a great start so far.

Hello Summer gift for me! One thing that helps me get things done and sometimes stick to my budget and focus is shopping online. I go on, order what I need and be done. Ok, it doesn’t always work out that way and I will sometimes get side tracked. Those darn, “Customers who bought this also bought . . .” “Customers who viewed this also viewed . . . ” Ahhhhh! Rabbit hole and I’m gone. But, when I do manage to stay focused, I can order just what I set out to buy and usually avoid shipping charges when possible (Amazon Prime is my best friend). A few weeks ago, a package arrived and it was like a Hello Summer box all chosen for me. Ok, so I did all the choosing, but still, it was a great little gift in the mail. Much more exciting than the usual dog food or napkins that we usually get every month from Amazon. New workout socks to help keep me motivated to get my butt to the gym even in the summer, a great new book for summer reading, a fancy new toothbrush that my dental hygienist recently recommended, and a lovely breathe blend of essential oils for the room diffuser. Well, Hello Summer!

Pesto Chicken

This meal is a quick and simple one that takes only a handful of ingredients and is ready in no time.

I utilize my cast iron skillet for this one so I can easily transfer from the stovetop to the oven. It’s very similar to the Baked Chicken Caprese that is a favorite in our house.

It’s great for those busy nights when you are running from different activities. This Pesto Chicken can be made in advance and reheated or used cold on a salad.

Pesto Chicken

Ingredients

1-2 pounds boneless chicken breasts

5-10 oz premade or homemade pesto sauce. I buy mine at Aldi.

2-4 TBS Italian Seasoning

2-4 TBS olive oil

1-2 C shredded mozarella cheese

Salt and pepper to taste

Optional – Pasta or rice to go along with chicken. See **Note Below

Directions

Preheat oven to 400°F

In a oven and stove top safe dish, heat up oil.

Season chicken with Italian Seasoning and salt and pepper and lay in hot oil.

Cook Chicken for about 5 minutes on the first side until it starts to get golden brown and then carefully flip over to the second side. You will finish cooking in the oven.

You may want to cover with lid as it may splatter.

Transfer to greased oven safe dish if needed.

Spoon on about 2/3 of the pesto sauce onto each chicken breast. Top each breast with some mozzarella cheese.

Bake chicken in the oven at 400° covered for 20-30 minutes, or until chicken is completely cooked through and is no longer pink. Internal temperature should be 165° F.

**Note: I reserved the remaining pesto sauce and added it in with a little heavy cream and about 4 oz of cream cheese into my cooked pasta and tossed this together. I served the chicken sliced on the bias on top of the pesto pasta. You could serve the chicken on rice, or just paired with a vegetable.

You could serve the chicken cold on a salad too (I think on a Caesar salad would be great).
